I have not picked up my knitting needles just yet, but the other day I wrapped the Vanilla Butter Fudge that me and Tyra made with my mother some weeks ago before all the drama happaned.
I have been making this fudge for Christmas with my family since I was a kid and it feels good to be able to pass it on. It is delicious and not very difficult. Just make sure to make enough of it - for the holidays, for gifts and some just for you.
Ingredients:
1 cup heavy cream
1 1/2 cup sugar
100 g salted butter
1/2 cup light corn syrup
1 teaspoon pure vanilla extract
1. Combine all ingredients in a heavy saucepan over low heat. Stir constantly with a wooden spoon until sugar dissolves and butter is melted.
2. Bring to a boil and cook until mixture reaches soft-ball stage, or 238 degrees on a candy thermometer. Add vanilla.
3. Spoon into a greased 8 x 8 baking pan. Let cool, then cut into squares.

Let me introduce you to my new knitting model, 47 cm and 2.5 kg.
Me and our baby boy Ivar are finally home on a visit! It is impossible to describe exactly how good it feels to have both my children and my darling Kristofer all in the same place. We will have to go back to the hospital tomorrow to do another full check up on Ivar, who has a some mysterious blood in his stomach. Meanwhile, we stock up on many hugs and kisses.
We had, six weeks early, a little baby boy on the 6th of December. He is absolutely beautiful and as you might imagine rather small. The birth was a bit of a drama. I was not prepared at all for a delivery and had planned to keep on working until Christmas.
None of my baby knits are finished, or the right size for that matter. I am so thankful that despite the early arrival, the sudden incision and the current hospital stay - we are doing quite fine. There is still some worries to be solved before we can go home, but I hope me and our baby will be home for Christmas.
I long for my family, especially my daughter who has not met her little brother yet. You will not hear from me in a little while, but please do not worry. I have got a new love in my life to add to the ones I already cherish. I am blessed.
